German Carob Cake

Ingredients

  • 1 cup coconut milk plus ½ cup water

  • ½ cup of maple syrup or sugar

  • 1 ½ cups almond flour 

  • ½ cup gluten free flour

  • 1 ½ tablespoons baking powder

  • ¾ teaspoon salt

  • ½ cup carob powder

  • 1/3 cup applesauce

  • 1 tablespoon lemon juice

  • 1 teaspoon of vanilla essence

  • 1 tablespoon of extra light olive oil                  

Preparation

  1. Pre-heat oven to 350°F.

  2. Combine wet mixture with dry ingredients.

  3. Place in cake pan.

  4. Bake in oven for 40 minutes.

  5. Let cool. Frost with Carob avocado pudding mix.
