Baked Okra
Ingredients
5 cups frozen or fresh okra, chopped
2 Tbsp of cornmeal
1 ½ tsp of onion powder
¼ cup olive oil-less when doubling
½ cup nutritional yeast flakes
1 ½ tsp salt
Preparation
If okra is fresh, wash and cut in ½ inch thick circles. If frozen, allow to thaw a little.
Mix all ingredients together very well.
Coat okra with the above mixture. If breading meal will not stick, okra may need to thaw longer.
Bake on baking sheet at 350°F for 45 minutes. Turn okra while baking for an even browning.
Makes 10 servings.
