Baked Okra

Ingredients

  • 5 cups frozen or fresh okra, chopped

  • 2 Tbsp of cornmeal

  • 1 ½ tsp of onion powder 

  • ¼ cup olive oil-less when doubling

  • ½ cup nutritional yeast flakes

  • 1 ½ tsp salt  

Preparation

  1. If okra is fresh, wash and cut in ½ inch thick circles. If frozen, allow to thaw a little.

  2. Mix all ingredients together very well.

  3. Coat okra with the above mixture. If breading meal will not stick, okra may need to thaw longer.

  4. Bake on baking sheet at 350°F for 45 minutes. Turn okra while baking for an even browning.

  5. Makes 10 servings.
