Scrambled Tofu

Ingredients

  • 1 block of firm or extra firm tofu

  • ½ cup finely chopped onions

  • ½ cup chopped peppers (opt.) 

  • 1 ½ Tbsp nutritional yeast flakes

  • 2 tsp chicken style seasoning

  • ½ tsp salt 

  • 1 ½ tsp onion powder

  • ¼ tsp garlic powder

  • 1/8 tsp turmeric (for color) 

  • ½ cup of parsley or cilantro

  • 2 tsp extra virgin olive oil (optional) 

Preparation

  1. In a skillet, saute onions and peppers in water and boil until soft.

  2. Rinse tofu in cold water; drain and mash with potato masher, fork, or crumble with fingers and then add to skillet. 

  3. Add remaining ingredients together and stir well on medium heat 5-15 minutes. Longer cooking gives a chewier texture.

  4. Oil is optional but it adds flavor.
