Scrambled Tofu



Ingredients
1 block of firm or extra firm tofu
½ cup finely chopped onions
½ cup chopped peppers (opt.)
1 ½ Tbsp nutritional yeast flakes
2 tsp chicken style seasoning
½ tsp salt
1 ½ tsp onion powder
¼ tsp garlic powder
1/8 tsp turmeric (for color)
½ cup of parsley or cilantro
2 tsp extra virgin olive oil (optional)
Preparation
In a skillet, saute onions and peppers in water and boil until soft.
Rinse tofu in cold water; drain and mash with potato masher, fork, or crumble with fingers and then add to skillet.
Add remaining ingredients together and stir well on medium heat 5-15 minutes. Longer cooking gives a chewier texture.
Oil is optional but it adds flavor.
