Asian Coleslaw with Avocado

Ingredients

  • 4 cups of cabbage, finely sliced (use a sharp knife or slicing blade in food processor).  

  • 1 ½ cups carrot grated

  • 1 ½ tsp. Celtic salt (fine)

  • 1 ½ tsp. ginger, grated 

  • ½ tsp garlic, crushed

  • ½ cup red onion sliced

  • 3 green onions thinly sliced 

  • ½ cup cilantro

  • Sesame seeds to garnish the coleslaw 

  • 2 tsp. sesame oil

  • 2 Tbsp. lime juice

  • 1 Tbsp. olive oil 

  • 1 Tbsp. apple juice concentrate

  • 3 Tbsp. lemon juice

  • 2 Tbsp. honey or maple syrup  

  • 1 Avocado

Preparation

  1. In a bowl, add your cabbage, carrots, celtic salt, ginger, garlic, red onion, green onions, cilantro, and sesame seeds for garnish

  2. In another bowl, mix altogether the sesame oil, olive oil, lime juice, lemon juice, apple juice concentrate, and honey. Garnish with sesame seeds. May add tahini mayo liquefied more with water.
