Rice Pudding

Ingredients

  • ¼ cup maple syrup or sweetener

  • 1 tsp coriander (freshly ground is best)

  • 5 cups soy or almond milk

  • 2 tsp vanilla

  • 4 cups cooked rice

  • 1 cup cashews

  • 1 tsp salt

Preparation

  1. Place rice in baking dish and set aside.

  2. Blend cashews, maple syrup, salt, coriander, vanilla with 2 cups of milk.

  3. Add remaining milk and blend again; then pour over rice.

  4. Bake for 1 ½ hours at 350°F until top is brown and puffy.

  5. Serves 6.
