Minestrone Soup

If you love vegetables you are going to love this soup. Don’t be afraid to add or take away vegetables.  I usually use whatever I have on hand at the time, so my soup comes out different every meal.  You might notice I did not list any salt.  That is because there is salt in the bouillon cubes and chicken style seasoning.  If adding pasta, add 15 minutes before cooking is complete. Enjoy!

Ingredients

  • 2 quarts canned tomatoes

  • 1 quart water

  • 2 large onions, diced

  • 3 stalks celery, diced

  • 3 raw carrots, diced

  • 1 cup raw okra

  • 2 cups chopped raw cabbage

  • 2 cups diced zucchini

  • 2 cups raw green beans, cut into bite size pieces

  • 1 large potato, cut into bite-size pieces

  • 1 16 ounce can pinto beans

  • 1 16 ounce can white northern beans

  • 1 16 ounce black beans

  • 1 to 2 tablespoons Italian Seasoning

  • Garlic salt or powder to taste

  • 6-8 imitation chicken bouillon cubes (or 3 Tbs. Chicken Style Seasoning)

  • 1/2 cup mini shells or other small pasta (optional)

Preparation

  1. In large soup pan, combine tomatoes, water, onions and celery and bring to a boil.

  2. Add remaining ingredients (except pasta) and add water as needed.

  3. Simmer approximately 1 to 2 hours until vegetables are tender.
