Glazed Beets with Lemon Sauce

Scrub beets, steam whole with skins until tender.  Peel beets and dice or slice thinly (save water from cooked beets).

Mix together:

  • 1 cup beet juice or water

  • 2 tablespoons arrowroot or cornstarch

  • ¼ teaspoon salt

Let simmer until clear and thick.

Remove from heat and add:

 

  • 2 tablespoons lemon juice

  • ½ teaspoon lemon rind

  • 1 tablespoon honey

Add beets and stir lightly.
