Gingered Carrot and Beet Salad

This salad is best made a couple of hours ahead of time so the flavor can mingle in the marinade.

Preparation

  1. May use food processor or hand grater to grate beets and carrots. 

  2. Once grated, place carrots and beets in a large bowl.

  3. Mix the rest of the ingredients together and pour over carrots and beets.

  4. Toss thoroughly with marinade.

Ingredients

  • 3 carrots, grated

  • 1 large beetroot, grated

  • ½ inch piece of fresh ginger, peeled and grated

  • 2 cloves of garlic, crushed

  • Juice of 1 lemon

  • 1 tablespoon of olive oil

  • 1 teaspoon of salt
