Coleslaw

Ingredients

  •  4 cups cabbage, shredded

  •  ¼ cup carrot, grated

  • 1/3 cup aioli* or mayonnaise 

  • 1 Tbsp cane juice crystals or sugar

  •  2 Tbsp green onion, finely minced  

  • 2 Tbsp lemon juice 

  • ¼ tsp salt (or to taste) 

Preparation

  1. Combine cabbage and carrots in a large bowl.

  2. Mix together remaining ingredients in a medium bowl. (*Note: for aioli ingredients, please refer to Eggplant Parmesan recipe). Pour ingredients over cabbage mixture and mix well.

  3. Refrigerate 2-4 hours and serve.  

  4. Serves 12.

    Tip: This is a great time to use your food processor! Use it to shred your cabbage and carrots.
