Coleslaw
Ingredients
4 cups cabbage, shredded
¼ cup carrot, grated
1/3 cup aioli* or mayonnaise
1 Tbsp cane juice crystals or sugar
2 Tbsp green onion, finely minced
2 Tbsp lemon juice
¼ tsp salt (or to taste)
Preparation
Combine cabbage and carrots in a large bowl.
Mix together remaining ingredients in a medium bowl. (*Note: for aioli ingredients, please refer to Eggplant Parmesan recipe). Pour ingredients over cabbage mixture and mix well.
Refrigerate 2-4 hours and serve.
Serves 12.
Tip: This is a great time to use your food processor! Use it to shred your cabbage and carrots.
