Broccoli, Cauliflower & Carrots

Ingredients

  • 1 large head of broccoli chopped into medium size pieces

  • 1 head of cauliflower-chopped medium size

  • 3-4 carrots depending on size

  • 1-2 zucchinis and/or peppers (optional)

  • 1 small red onion chopped

  • 6 cloves of garlic

  • Small handful of fresh parsley

  • Sprinkle of dry rosemary, sage to taste

  • Drizzle of olive oil

  • 1/2 -1 cup of water

Preparation

  1. In a large skillet saute in a little water add the chopped red and sweet onion and garlic, until onions are almost soft.

  2. Next add the carrots and cook for about 8 minutes on high.

  3. Add water as needed to lightly steam the veggies.

  4. Add the broccoli, cauliflower and rest of ingredients.

  5. Cook until the broccoli turns a bright green.

  6. Turn burner off and let the veggies slightly cool and then drizzle with a little olive oil to make the veggies look shiny.
