Black Bean Stew

Ingredients

  • 4 cups of cooked black beans

  • 1 large onion, coarsely chopped

  • 2 tablespoons of olive oil

  • 4 garlic cloves, minced

  • 1 medium red pepper, diced, optional

  • 2 teaspoons of cumin, ground

  • 2 teaspoons of smoked paprika, optional

  • 2 cups of vegetable broth or water

  • 1 can of tomato paste

  • Cilantro, as much as desired

Preparation

  1. Sauté onion, garlic, pepper and cumin until soft.

  2. Add beans, tomato paste, and broth or water. Bring to a boil.

  3. Reduce heat and simmer until liquid is reduced by half and a thick sauce is formed.

  4. Add salt to taste.
