Black Eyed Peas

Ingredients

  • 2 cups black eyed peas 

  • 1 medium onion 

  • 1 Tbsp olive oil  

  • 2 roma tomatoes, chopped

  • 1 ½ tsp salt

  •  ¼ cup basil, fresh 

Preparation

  1. Soak beans overnight.

  2. Cook until soft.

  3. Sauté onion until soft then add tomatoes.

  4. Simmer for 5 minutes then add salt, oil, and basil.

  5. Then add cooked beans and simmer another 10 minutes.
