Black Eyed Peas
Ingredients
2 cups black eyed peas
1 medium onion
1 Tbsp olive oil
2 roma tomatoes, chopped
1 ½ tsp salt
¼ cup basil, fresh
Preparation
Soak beans overnight.
Cook until soft.
Sauté onion until soft then add tomatoes.
Simmer for 5 minutes then add salt, oil, and basil.
Then add cooked beans and simmer another 10 minutes.
