Eggplant Parmesan

Aioli

Ingredients
  • 1 cup Silk soy milk, unsweetened

  • 1 ½ tsp. salt

  • 1 tsp onion powder       

  • ¼ tsp garlic powder 

  • 1 cup oil            

  • 1 ½ Tbsp lemon juice 

Preparation

1. Place milk, salt, onion powder, and garlic powder in blender. Blend on high; slowly drizzle in oil with machine running. 

2. Pour mixture into a bowl; gently fold in lemon juice. Refrigerate. 

Tip: This will thicken as it chills. Drizzling the oil slowly is the secret to get Aioli.  It should take about 1 minute to add the oil. 

 

Tomato Sauce

Ingredients
  • 2 onions finely diced 

  • 3 fresh tomatoes, diced (or 9 Roma tomatoes) 

  • ½ cup olive oil 

  • 2 Tbsp. tomato paste

  • 2 tsp. paprika 

  • Salt to taste 

  • 1 Tbsp of dry basil (at least ¼ cup if fresh)

  • 2 tsp. fresh oregano

  • 2 cloves garlic 

  • Pinch of thyme

  • 1 tsp. maple syrup 

Preparation
  1. Sauté onions, then add tomatoes and olive oil. Cook until it becomes soft.

  2. Next, add in the tomato paste, paprika, salt, basil, oregano, garlic, thyme, and maple syrup.

 

Tofu Cottage Cheese

Ingredients
  • 1 Block of Tofu (firm or soft)

  • 1 tsp. salt

  • 1 tsp. onion powder 

  • ½ cup mayo (or garlic mayo)

  • ½ tsp. garlic powder

  • 1 Tbsp. parsley flakes 

 Preparation
  1. Crumble tofu, then mix in seasonings

  2. Afterwards, add mayo and mix together again. 

 

Breading Meal

Ingredients
  • 2 cups gluten-free bread crumbs, fine 

  • ½ cup nutritional yeast flakes

  • ½ cup cornmeal 

  • 2 Tbsp. dried parsley flakes, fine

  • 2 Tbsp. onion powder

  • 2 tsp. garlic powder 

  • 1 tsp. paprika or pinch cayenne, (optional)

  • 1 ½ tsp. sea salt (to taste)

Preparation
  1. Mix ingredients well.

  2. Store in covered jar in refrigerator.

Ingredients

  • 2 Eggplants, peeled and sliced
  • Aioli (for recipe, see above)
  • Tomato sauce (for recipe, see above)
  • Tofu cottage cheese (for recipe, see above)

Preparation

  1. Dip the eggplants in Aioli then in breading meal.
  2. Then bake at 375°F in oven for at least 15-20 min and when brown, flip over and bake on other side. 
  3. While eggplant is baking, make tomato sauce & tofu cottage cheese.
  4. When the eggplant is done take them out and in a casserole dish, put a layer of tomato sauce, layer of baked eggplant, sprinkle tofu cottage cheese, and repeat two more times.
  5. Bake in oven for another 30 minutes to blend the flavors together.
