Sunflower Burgers
Ingredients
3 cups sunflower seeds
2 cups pecans
2 cups grated carrot
2 cups grated potato
1 ½ cups mashed firm tofu
2 Tbsp Stock Powder
1 cup of water or more as needed
4 Tbsp tomato paste
4 cloves garlic
3/4 cup spelt flour or gluten free flour blend
1 large onion, finely chopped
Salt to taste
2 cups gluten free breadcrumbs or quick oats
Preparation
Blend sunflowers until fine. Place in mixing bowl.
Process pecans in blender until fine. Place in mixing bowl.
Combine all other ingredients and mix.
Scoop out onto oiled tray and bake at 350° F. Turn burgers over after 20 minutes and continue cooking until golden brown.
Serve with tomato sauce or gravy.
Excellent for freezing.
Makes 30 burgers.
