Holly’s Corn Bread

Ingredients:

  • 1 3/4 almond/soy cup milk mixed with 1 tablespoon of lemon juice or 4 teaspoons of ENER-G egg replacer

  • 2 cups fine cornmeal

  • 2 teaspoons baking powder

  • 3/4 teaspoon salt

  • 1 tablespoon of ground chia or flax

  • 1/4 cup coconut or olive oil

Preparation:

Preheat oven to 350° F. Mix dry ingredients in medium size bowl. Mix wet ingredients in smaller bowl. Combine together. Pour into well-greased baking pan. Bake for 25-30 minutes. Watch carefully so it does not burn.
