Greek Salad

Mix together the following ingredients

  • Juice of 1 lemon

  • 1 teaspoon finely grated ginger

  • 1-2 teaspoons salt

  • ½ teaspoon oregano

  • 1 teaspoon Kome Miso

  • 2 tablespoon olive oil

  • 1 teaspoon finely grated garlic

  • cayenne pepper to taste

  • 1 teaspoon Italian Seasoning

  • 1 teaspoon smoked paprika

  • 1 tablespoon nutritional yeast flakes (optional)

Mix and pour over

  • 1 cup tofu, cut in ¾ inch cubes

Marinate for at least 1 hour, stirring occasionally.

Then add to the marinated tofu

  • 2 fresh tomatoes cut in wedges

  • 2 cucumbers, cut in wedges

  • ½ large red onion, chopped small

  • ½ cup Kalamata olives

  • 1 stick celery sliced (optional)

  • 2 tablespoon chopped parsley

Toss and serve on a head of lettuce, washed and dried. Serves 6
