Ambrosia


Ingredients
2 cups fresh pineapple chunks*
2-4 mandarin oranges*
1 tsp. vanilla
¼ cup frozen pineapple juice concentrate
3 Tbsp. white or black chia seeds
1 Tbsp. honey (optional)
2 cups red seedless grapes, sliced in half*
1-15 oz. Can organic coconut milk
Preparation
Mix well the coconut milk with pineapple juice, honey and vanilla.
Add the chia seeds and mix well with a fork or a wire whisk.
After 5 min. mix again. Repeat this a few times until the chia seeds are well mixed in forming a suspension without any lumps.
Set this 'sauce' aside for 2- 4 hours, or overnight.
Cut the pineapple in bite size chunks, cut the grape in half and cut each section of the orange in half, or in thirds.
Mix the fruit with the coconut-chia sauce.
Serve it in a nice glass dish. You can top it with fresh raspberries, or add strawberries to the ambrosia for more color. This makes a nice holiday dish!
*Variation: May substitute for low glycemic fruits (kiwis & berries)
